Afritada Baboy (Pork)
Ingredients
- 2 lbs. pork shoulder or pork belly
- 1 8 oz. can tomato sauce
- 1 tablespoon of soy sauce
- 1 large potato
- 2 medium carrots
- 3 to 5 pieces dried bay leaves
- 2 cups beef broth
- 1 small red bell pepper
- 1 small green bell pepper
- 1 medium onion
- 5-6 cloves garlic
- 1 fresh red chilli whole
- 3 tablespoons cooking oil
- Salt and ground black pepper to taste
Instructions
- Cube Pork and set aside
- Peel and cut/cube potatoes and carrots
- Slice Bell Peppers
- Dice onions and garrlic
- Heat oil in a pot.
- Sauté garlic until you get the aroma
- Add onion, sauté until translucent
- Add pork. sauté until light brown.
- Add potato and carrots. Cook for 5 to 8 minutes.
- Pour tomato sauce and beef broth. Bring to a boil
- Add bay leaves and whole fresh chilli. Cover and then cook in medium heat for 45 minutes or until the pork gets tender (potatoes and carrots are fork tender).
- Note: add more beef broth if needed.
- Add bell peppers. Cook for 3 minutes.
- Season with salt and ground black pepper. Stir.
