Afritada Baboy (Pork)

Ingredients
  

  • 2 lbs. pork shoulder or pork belly
  • 1 8 oz. can tomato sauce
  • 1 tablespoon of soy sauce
  • 1 large potato
  • 2 medium carrots
  • 3 to 5 pieces dried bay leaves
  • 2 cups beef broth
  • 1 small red bell pepper
  • 1 small green bell pepper
  • 1 medium onion
  • 5-6 cloves garlic
  • 1 fresh red chilli whole
  • 3 tablespoons cooking oil
  • Salt and ground black pepper to taste

Instructions
 

  • Cube Pork and set aside
  • Peel and cut/cube potatoes and carrots
  • Slice Bell Peppers
  • Dice onions and garrlic
  • Heat oil in a pot.
  • Sauté garlic until you get the aroma
  • Add onion, sauté until translucent
  • Add pork. sauté until light brown.
  • Add potato and carrots. Cook for 5 to 8 minutes.
  • Pour tomato sauce and beef broth. Bring to a boil
  • Add bay leaves and whole fresh chilli. Cover and then cook in medium heat for 45 minutes or until the pork gets tender (potatoes and carrots are fork tender).
  • Note: add more beef broth if needed.
  • Add bell peppers. Cook for 3 minutes.
  • Season with salt and ground black pepper. Stir.

Transfer to a serving plate. Serve with rice and enjoy!
